Mixed Vegetables cooked in a Spicy Tomato sauce

Veggies cooked in tomato sauce

This is a quick dish that can be made so fast.This can be made even faster,if you cook everything in pressure cooker.The dish meant to be a thin gravy one,but if you want it thick you could mash some potatoes in the gravy.Infact you could add any vegetables you want.I served this dish with idyappam…Please try this dish and let me know what you think…


Ingrediants:
Cauliflower-1 cup florets
Carrot-1 cubed
Potato-1 large cubed
Tomato puree-1 cup
Red chilli powder-2 tsp
Coriander powder(malli podi)-1 tblspn
Garam masala powder-1 tsp
Turmeric powder(manjal podi)-1 tsp
Kasuri methi leaves-1 tblspn
Cumin seeds-1 tsp
Salt to taste
Sugar-1 tsp
Coriander leaves-for garnishing
Oil-2 tblspn
Method:
In a kadai add oil and crackle some cumin seeds.Now add in all spice powder along with some water,so that the spices don’t burn.cook it till oil separates.
Add in Tomato puree and mix well.Cook until oil separates.
Add in all veggies and mix well.Season with salt and sugar.
Pour in water and cook for 15-20 min until veggies are cooked.
Put in kasuri methi leaves and mix well.
Garnish with coriander leaves and serve hot with any dish.

Cook till veggies are cooked
Sprinkle some kasuri methi leaves…(Secret ingrediant)
Garnish with cilantro

    Aarthi, did you use store bought tomato puree or homemade puree?

    @usha..I used Storebought tomato puree for that recipe,since i din have fresh tomatoes on hand at that time..But i always prefer to use fresh tomatoes that what will give nice flavour and taste
