Tomato rice is my all time favourite. This is my mom’s version..I have shared a video recipe in my blog of this recipe and it got so many views as well. But later i deleted those videos due to some issues. I got so many mails from my viewers asking me for that recipe, so i thought of sharing it in my step by step picture form and i also made a video too…

This tomato rice is so easy to make and it makes a great dish to put in lunch box. You just need a simple onion raita to serve with it. When we were little mom used to make this and put a boiled egg or or this potato roast or papad with this. OMG it taste heavenly. Hope you will give this a try and let me know how it turns out for you..
Preparation Time : 10 mins
Cooking Time : 20 to 30 mins
Serves : 4

Ingredients:

Rice – 2 cups
Oil – 4 tblspn
Cinnamon / Pattai – 1 stick
Fennel Seeds / Sombu / Sanf – 1 tblspn
Bay Leaf – 2
Garlic – 10 cloves peeled
Onion – 1 large sliced thinly
Tomatoes – 5 sliced thinly
Chilli Powder – 1 tblspn
Kashmiri Chilli Powder – 1 tblspn

Turmeric Powder / Manjal Podi – 1 tsp
Garam Masala Powder – 2 tsp
Curry Leaves a handful
Salt to taste
Sugar – 2 tsp
Coriander Leaves a handful finely chopped

Method:

Start by cooking rice, i used ponni rice. Wash rice well and soak it for 30 mins. I took 4 cup of water for 2 cup of rice. I added it to pressure cooker, whistled it for 2 times, simmered the flame and cooked for 10 mins. Turn off the heat and let the steam go all by itself. Open the cooker, fluff the rice and let it cool down completely.

Heat oil in a kadai. Add in whole spices and let them sizzle.

Add in garlic and saute till golden.

Add in onions and curry leaves. Saute till golden.

Add in salt and turmeric powder and mix well.

Add in tomatoes and cook till it turns mushy. Keep cooking them, at a stage the oil will separate from the mix.

Add in the spice powders and sugar. Mix well.Add in coriander leaves. and cook till the masala is thick. Now add in the cooked rice and mix well.Serve.
