    Nuts Cookies Recipe / Mixed Nuts Cookies

    Sorry for my absence these many days, i have been a little busy in preparing for the finale of the cooking competition which is going to be held in chennai hosted by puthuyugam. If you were following me in facebook you must be aware of that. We are leaving today evening, so thought of sharing it with you. You may miss me and my post for a week. Because we are planning to stay in chennai for 2 more days after competition and then take a trip to alleppey boat house. I think it will be so much fun because my two sisters are coming with us. So stay in touch and keep checking my blog.


    Preparation Time : 10 mins
    Baking time : 20 to 22 mins
    Makes : 15 to 18 cookies

    Ingredients:

    All Purpose Flour / Maida - 2 cup + 2 tblspn / 240 grams +2 tblspn
    Egg - 1
    Sugar - 1 ¼ cup / 250 grams Powdered
    Mixed Nuts - 1 cup ( I used cashews, almonds and walnuts )
    Oil - ½ cup /125 ml
    Salt - ¼ tsp
    Cardamom powder - 1 tsp
    Baking soda - 1 tsp
    Vanilla Essence - 1 tsp

    Method:

    Preheat oven to 180 Degree C.

    Mix flour, baking soda, ground cardamom and salt in a bowl.

    Take oil, powdered sugar and vanilla in a bowl and mix well. Add in a egg and mix well.

    Add in the flour mix and fold well. Add in nuts and fold as well.

    Now take a small ball from it and shape into ball. Flatten it and arrange it in a oiled baking tray. Bake for 20 to 22 mins.

    Remove to cooling rack and let it cool completely.

    Store in a air tight container.

      HI Aarthi, i have added 1 table spoon of baking soda instead of 1 tea spoon. what shall I do now pls help 🙁 🙁

      @Pavithra Srivatsanthere is nothing u can do once u added it in..may be u can make one more batch without baking soda and mix it with this
