Shortbread cookies is delicious buttery and simple cookies which you can make for your little ones. It is very versatile and can be customized to your preference. What i did is i made a double batch of this dough and made a variety of cookies just to show you the different versions, Will soon share all those one by one..

Preparation Time: 10 mins
Chilling Time : 1 hour
Baking Time : 15 mins
Makes : 24 cookies
Ingredients:
All Purpose Flour / Maida – 1 3/4 cup / 210 grams
Sugar – 1/2 cup / 100 grams (powdered)
Unsalted Butter – 150 grams (soft)
Vanilla Essence – 1 tsp
Salt – a pinch
Nuts – 1 to 1.5 cups finely chopped (any nuts)
(My 1 cup measures 240 ml)
Method:
Preheat oven to 180 degree C / 350 degree F.
Take butter, sugar in a bowl and cream till fluffy.
Add in vanilla, salt and mix well.
Add in flour and mix well to form a dough.
Chop the nuts in to fine pieces.
Sprinkle them in the bottom of the muffin pan.
Take small portion of dough and press it over the nuts.
Pop this in oven and bake for 20 to 25 mins.
Now remove from oven and let it cool for 5 mins.
Remove and cool it on a wire rack completely.
Store in a air tight container.

Lovely cookies… Can you suggest a method to bake them without an oven? In a microwave?
if u have convection mode, you can bake
Is there a substitute for butter? Can I use regular oil or coconut oil instead?
u can use oil. But the texture of cookies will be a bit diff
can i make it without moulds just like as nankhatai
if u want to make as normal cookies. then chill the dough for 1 hour, then take a small portion and roll it out. then flatten slightly and bake
