Oil – 2 tblspn + 1 tblspn
Ladies Finger – 15 chopped
Cumin Seeds / Jeerakam – 1 tsp
Onion – 1 large chopped finely
Green Chilli – 1 slit
Turmeric Powder – 1 tsp
Ginger Garlic Paste – 1 tblspn
Tomato – 2 large chopped finely
Chilli Powder – 1 tsp
Garam Masala Powder – 2 tsp
Coriander leaves a handful finely chopped
Salt to taste
Water as needed
Method:
Heat oil in a kadai. Add chopped ladies finger and cook for 5 to 6 mins till has got a nice colour to it. Remove and set aside.
Heat 1 tblspn of oil in the same pan.. Add in cumin and let it sizzle.
Add in onions and cook till golden. Add in chillies and mix well. Add in salt and mix well
Add in ginger garlic paste and cook for a min or so.
Add in tomato and cook till oil separates from the mix.
Add in all the spice powders and mix well.
Add in water and mix well. Add in the fried okra and mix well. Simmer this for 5 to 6 mins.
Add in coriander leaves and mix well.
Serve with roti.

add chilli and garam masala powder |
mix well |
add water |
bring it to a boil |
add fried ladies finger in |
mix well |
simmer till thickens |
add coriander leaves |
mix well |
