    One Pot Chicken, Rice & Veggie with Step by Step Pictures.

    This chicken rice is loaded with flavour and veggies. It taste so fantastic with fragrant rice and chicken. This is one recipe which has tons of vegetables and chicken. The rice itself is fragrant and nutrients.

    This rice is a one pot feast. It is a recipe which can be made using bits and pieces lying in your fridge. You dont need any sidedishes for this. Super easy to make.

    Ingredients
      

    FOR CHICKEN:

    • Boneless Chicken Thighs - 6
    • Oregano - 1 tsp
    • Chilli flakes - 2 tsp
    • Salt to taste
    • Black pepper to taste
    • Cumin powder - 1 tsp
    • Chilli Powder - 1 tsp
    • Salt to taste

    FOR RICE:

    • Basmati Rice - 1.5 cup
    • Oil - 3 tblsp
    • Butter - 3 tblsp
    • Onion - 1 chopped finely
    • Garlic - 6 cloves chopped finely
    • Tomatoes - 2 chopped finely
    • Capsicum - 1 chopped finely
    • Mushrooms - 10 chopped
    • Broccoli - 1 cup
    • Vegetable stock or Chicken Stock - 3 cups
    • Salt and pepper to taste

    Instructions
     

    • Mix chicken with spices and set aside.
    • Heat oil and butter in a pan, add in onions, garlic and saute for 2 mins.
    • Add in veggies and stir fry for 2 mins.
    • Add in rice and stir well.
    • Add in stock and bring it to a boil. Add salt and pepper to taste
    • Add chicken in and cover and cook on low heat for 15 to 20 mins.
    • Serve.

      Hi Akka..
      How we got the veggies and chicken stock.. like we need to pre-cook those veggies and Chicken before.. Please give the clarity.

        Chicken stock which i used is readymade. if you don't have stock use plain water.
