Is there any special dish than a biryani on a special day. I think NO..I love biryani, You can see my love for biryani through this link..I have posted quite a few biryani recipes in my blog. This is my second mutton biryani recipe, the first one is a dum style.. After posting that, i wanted to try a simple pressure cooker style biryani, and finally i made it. It turned out so yummy and flavourful. So with no more delay, off you go to the recipe..

FULL RECIPE:
Preparation Time : 30 mins
Cooking Time : 1 Hour 30 mins
Serves : 4 to 5
Ingredients:
Ghee – 2 tblspn
Oil – 3 tblspn
Basmati Rice – 2 cups
Green Chillies – 4 to 5 slit
Onion – 2 large sliced thinly
Tomatoes – 2 large chopped
Ginger Garlic Paste – 2 tblspn
Mint Leaves – 1/4 cup
Coriander Leaves / Cilantro – 1/4 cup
Chilli Powder – 1 tblspn
Coriander Powder / Malli Podi – 2 tblspn
Garam Masala Powder – 1 tblspn
Yogurt – 1/2 cup
Salt to taste
Water – 2 cups
Mutton Stock which comes from cooking mutton – 1 cup
Whole Spices:
Bay Leaf / Brinji ilai / pandan leaf – 1
Cumin Seeds / Jeerakam – 1 tsp
Cardamom / Yelakai – 10
Cloves / Krambu – 10
Fennel seeds / Saunf / Sombu – 1 tsp
Cinnamon – 2 sticks
For Marination:
Mutton – 1/2 kg
Curd / Yogurt – 1/2 cup
Ginger Garlic Paste – 2 tblspn
Turmeric Powder – 1 tsp
Lemon Juice – 1 tblspn
Salt to taste
Method:
Start by washing rice in lots of water. Now soak it in clean water for 30 mins, drain and set aside.
Take mutton and add all the marinating ingredients in a bowl. Mix well and let it marinate for 30 mins. Now take it in a pressure cooker, cover and pressure cook for 7 to 8 whistle. Turn off the heat and let the steam escape all by iself. Open the cooker and remove the mutton pieces to a bowl. Drain the stock and set aside.
Now you can use the same cooker to make the masala.
Heat oil and ghee in a cooker. Add in whole spices and let it sizzle. Add in onions, salt and saute till it turns golden brown.
Add in green chillies and ginger garlic paste and saute for a min.
Add in tomatoes and cook till it turn mushy.
Add in coriander and mint leaves. Mix well.
Add in yogurt and spice powder and mix well to form a masala.
Now add in the cooked mutton and mix well. Add in rice, stock and water.
Bring it to a boil. Cover the cooker and simmer it for 15 to 20 mins. Now turn off the heat and let the steam escape all by itself. Open the cooker and fluff it up.
Serve this biryani with raita.
