Savoury Muffins

I love making muffins because they look good and they are easy too..and also you don’t need to find a knife to cut it..This muffin is not the sweet kind,it is a savoury version….This is adopted from one of nigella’s recipe,but I modified it to my style.the desiccated coconut in this recipe is completely optional.I used regular amul cheese for this,but you could use any cheese..The orginal recipe call for mustard but I substituted it with green chilli..Still it cameout good…This is really a simple dish just mix everything together in one bowl and bake it in muffin holders..The main thing for a lighter muffin is don’t over mix your batter,Just use a fork and mix the batter till it gets combined…So please try this and let me know what you think….

Ingrediants:
Flour- 2 cups / 250 gms
Wheat flour- 2/3 cup / 70 gms
Grated cheese- 11/2 cup / 125 gms
Oil- 60 ml / 1/4 cup / 2 fluid ounces
Buttermilk- 80 ml/ 1/3 cup
Milk- 80 ml / 1/3 cup
Desiccated coconut-  1 cup / 150 gms(optional)
Egg-1
Baking powder-2 tsp
Salt-1 tsp
Sugar-1 tsp
Green chilli-1 chopped
Sesame seeds-2 tblspn
Method:
Preheat the oven to 200 degree celcius
In a mixing bowl add flour,wheat flour,baking powder,salt,sugar and mix well.
Now in a another mixing bowl,add buttermilk,egg,cheese,coconut,green chilli,oil and mix well.
Now pour this wet ingredient in to the dry ingrediants and using a fork just mix them.Don’t over mix.
Line a miffin tray with cupcake cases and fill them.Sprinkle with sesame seeds over them and place them in oven.
Bake them for 15-20 min or till they are golden and cooked through.
Remove them and serve with a cup of tea.
