    Shahi Pulav ( Pulao ) / Shahi Pilaf / Shahi Biryani

    This is my second recipe for shahi pulav. This is one of my all time favorite recipe. I first posted it a year back, since it is my fav, i want it to have a clear pictorial recipe. So here i am with a new post with more pictures. You can check out my old recipe here.

    This rice dish has a slight sweetish tingle to it. It is a kind of rich recipe. You can make it in different variation, you can add saffron water in it, you can add veggies to it. I will soon post that. So off you go to the recipe.

    Preparation Time: 30 mins
    Cooking Time : 20 mins
    Serves : 2


    Ingredients:

    Basmati Rice -  1 cup
    Onions - 1 large sliced thinlyGreen Chilli - 3 large slit
    Ginger Garlic Paste - 2 tblspn
    Salt to taste
    Sugar - 1 tblspn
    Coriander Leaves - a handful
    Mint Leaves - a handful
    Water - 1.5 cup


    For Seasoning:
    Ghee - 2 tblspn
    Cumin Seeds / Jeerakam - 1 tblspn
    Bay Leaf - 1
    Cinnamon Stick - 1 inch piece
    Cardamom / Yelakai - 4 crushed
    Cloves / Krambu - 4


    Method:

    Wash and soak the rice for 30 mins.

    Heat ghee in a pressure cooker. Add in all the seasoning ingredients and saute for a while.

    Now add in salt and sugar and mix well. Let them cook for a while.

    Add in onions, green chilli and saute till they turn golden.

    Now add in ginger garlic paste and saute them for a min.

    Now add in the soaked drained rice and mix them well.

    Add in a good amount of coriander and mint leaves.

    Pour in 1.5 cups of water and bring it to a boil. Simmer the flame and pressure cook for 1 whistle. Let it simmer for 5 mins. Switch off the flame and let the steam go all by itself. Fluff the rice with a fork.

    Serve with any curry.
