ShortBread Cookies |
Hai Guys..This is a dish which I made specially for the contest “ Cooking is Child’s Play” in Women’s Web…Since I don’t have any kids,I made this with my little sister….I waited for such a long time to make this one,and as soon as I saw the contest,I thought this one will be the right recipe for the theme and immediately I made it…..Please wish me to win this contest…This is a great cookie dish that can be cooked with your kid..Probably you could make the dough and leave the cutting of the cookie job to your kids,They will Love it..Infact you could use any funny shape by using different cutters…It takes very little time to bake and make..It just melts in your mouth when you bite into it..So make this cookie and let me know what you think..
Flour- 150 gm / 1 1/3 cup
Butter-100 gm / 4 ounces / 1/4 pound
Salt a pinch
Icing Sugar(Confectioner Sugar)-50 gm / 1/2 cup
Vanilla-1 tsp
For Icing:
Dark chocolate-1 cup chopped
Method:
Preheat the oven to 170° C (350° F).Line a tray with foil or parchment paper.
In a mixing bowl add in butter and sugar and beat til creamy..
Add in vanilla and beat well..
Add in flour and salt and blend till combined.
Tip this dough into a plastic wrap and flatten it slightly.Place this in a metal plate and chill in the fridge for 1-2 hours..
Take the disc out of the fridge and roll it in a lightly floured surface(I used sheet of parchment paper underneath and floured it slightly and rolled the dough)..
Take a cookie cutter of your choice and dip it in flour and cut the dough with this..
Place this in tray and put it in fridge for 5 min.
Remove it and bake it in the oven for 7-10 min until light golden.
When it is cooked remove from the oven and cool it in a wire rack…
In the mean time melt the chocolate in a double boiler (Place a bowl of chopped chocolate over a bowl of simmering water, stir it till the chocolate melts and becomes smooth). If the chocolate gets too thick, you could add a tblspn of boiling water in the chocolate and stir it till it gets smooth.
Dip each cooled cookies in melted chocolate and arrange it in a plate.
You form any pattern or design in this…Let it rest for 1 hour till the chocolate sets..
Serve and enjoy..
