Soya Chunks & Vegetable Kurma / Soya Chunks Korma / Meal Maker Kurma – Sidedish for Rice, Roti and Poori

I love cooking with soya chunks, Whatever you try with this  stuff it taste delicious..I don’t know about you, but I love it..I started liking it even more once I started my GM diet plan..I know I dropped it, but still I am in a strict diet plan..I am trying a lot to avoid chicken..At those times soya chunks has become my substitute for chicken..I even like to call it as vegetarian meat often…

 

I made this korma few months back, I had it with Beans Briyani. I love to try out different varieties of curries to have with roti or pulav.This is one of the curry which came out so good and everyone in my house loved it..I even send some korma and pulav to my fiancée and he too loved it a lot, which is quite unusual because he is not so fond of vegetarian food..But if I make, he will eat anything..HA HA..

As you can see there is a long list of ingrediants in this..But this is a perfect dish to make when you have friends coming around or having huge parties and stuff like that..Even though the recipe list looks a kind of complicated, once you start making, it will be a breeze..Hope you will enjoy this and join me again on another recipe.
Ingrediants:
Soya Chunks – 3 cups cooked( Click to know how to cook soya chunks)
Onion- 1 large sliced
Ginger Garlic Paste- 1 tblspn
Green Chilli – 2
Tomatoes – 3 chopped finely
Beans – 10 chopped
Capsicum – ½ chopped
Peas – 1 cup
Coconut- 1 cup ground into paste
Milk – ½ cup
Cornflour / CornStarch – 1 tblspn
Sugar – 1tsp
Salt to taste
Coriander Leaves / Cilantro for garnishing
Oil- 3 tblspn
Whole Spices:
Mustard Seeds / Kaduku – 1 tsp
Cumin Seeds / Jeerakam – 1 tsp
Cinnamon / Pattai – 1 small stick
Fennel Seeds / Sombu / Saunf – 1 tblspn
Cardamom / Yelakai – 4
Cloves / Krambu – 4
Spice Powders:
Turmeric powder / Manjal Podi – 1tsp
Garam Masala powder -2 tsp
Chilli Powder – 1 tsp
Coriander Powder / Malli Podi – 1 tblspn
Pepper Powder – 1tsp
Cumin powder / Jeera podi -1 tsp
Method:
Heat water in a sauce pan along with some milk. Add in soya chunks and switch off the flame. Cover the pan and let it rest for 15 mins. Drain it and rinse in cold water. Sqeeze off the extra water and set aside till use.  See this recipe for the step by step pictures of how to prepare soya chunks.
Mix ½ cup of milk with cornstarch and set aside.
Heat oil in a kadai. Add all the whole spices given in the list in the same order and let it sizzle for 30 seconds.
Now add in onions and green chillies along with salt, sugar and ginger garlic paste.Fry this for 5 mins till the onion turn golden.
Add all the spice powders in the given order and sauté for 30 seconds.
Add in tomatoes and cook for 5 more minutes till the tomatoes turn mushy.
Now add in peas, capsicum, beans and mix well. Add in cooked soya chunks and mix that as well.
Add in ground coconut paste and mix well. Pour in enough water and bring it to a good boil. Cover and Simmer for 15 mins untill the peas and beans are cooked.
Now add in the mixed cornstarch milk into the gravy and mix well. It will get thick and shiny.
Garnish with coriander leaves and serve with rice or roti.

Mix corn flour with milk
Heat oil add mustard and cumin
fennel and cinnamon
cardamom and clove
add onions and green chillies
along with salt and sugar
in goes ginger garlic paste
turmeric and garam masala
chilli and coriander powders
pepper and cumin powders
mix well
add in tomatoes
and give a stir
cover and cook till tomatoes turn mushy
like this
now add beans, capsicum and peas
mix well

add coconut paste
and some water
mix well..Bring it to a boil
cover and simmer till veggies are cooked
add cornflour milk
and mix well…Simmer for few more minutes
add coriander leaves
and serve…

    Ha-you are slowly converting your fiancee to being a vegetarian, but do not tell him that! This dish must be tasty-another delicious meal. Fresh coconut paste does make for a tasty one.

    Looks great, and I want to try it! Good luck with your diet. I think if you can stick with giving up chicken you will feel the health benefit. I am sure that a pure vegetarian diet is best for health.

    Hi, can we omit milk & add water, coz milk & salt should not be merged together. Not good for skin.
