Spicy Vermicelli upma(Semiya upma)

Vermicelli Upma
This is one of the easiest recipe to make.It take less than 15 min.It can be made for a quick Breakfast or dinner.The cool thing in this Dish is you can add lot of vegetables in this and make it very healthy.

 Ingrediants:
Vermicelli-2 cup (preferrably roasted,if not roast it in a pan with a little oil)
Onion-1 finely chopped
Carrot-1 chopped
Capsicum-1 chopped
Beans-5 chopped
Frozen peas-1/2 cup
Greenchilli-2 chopped finely
Turmeric powder-1 tsp
Chilli powder-1 tsp
Lemon juice-2 tsp
Salt-to taste
Coriander leaves for garnishing
Seasoning:
Oil-2 tblspn
Ghee-1 tblspn
Mustard seeds-1 tsp
Urad dal-1 tsp
Cashew-5
Cumin seeds-1 tsp
Dry redchilli-1 tsp
Asafoetida-1 tsp
Curry leaves-1 spring
Ginger-1 tsp finely chopped
Garlic-1 tsp finely chopped
Method:
Heat 3 cups of water in a sauce pan and let it come to a rolling boil.
In a kadai add oil+Ghee and heat it up,Then Add all the seasoning ingrediant in the given order,let them sizzle for 1 min.
Add onion and greenchilli and fry it till translucent,Now add in the turmeric and chilli powder.
Add all the veggies and fry it for 2 mins.
Add a splash of water and cover the pan and let it cook untill done.
Now add the vermicelli and pour in the boiling water.
Keep the heat to simmer and let it cook covered till the water is absorbed.
Add in the chopped coriander and turn off the heat and let it stand for 10 min covered.
While serving mix in the lemon juice and enjoy.

Note:
You can heat about 4 cups of water ,so that if you need more water for the vermicelli you can add that boiling water.never add cold water to it.
