I love cooking with brinjals and amma loves eating it..I too love brinjals a lot, but there was a time when I totally hated it..I don’t know what made me to love brinjals, now I am totally addicted to it and as a result I have a whole lot of recipes in my blog…You can check it through my recipe index.

When I first came across this recipe, I know I am going to make it soon..And on new year this recipe became a part of our vegetarian feast…Amma loved it a lot and even my sister who doesn’t like brinjal enjoyed this recipe..
This dish gets it unique flavour from the kasuri methi which we add to it..This one is readily available in india..And for those folks outside india, it is wicked easy to make..Take a bunch of fresh fenugreek leaves and sun dry them or just throw them in a moderate oven till it is completely dried..Store this freezer(for more safety) and use it as needed.
I served it with Tomato kulambu & Valakai poriyal (iyengar style)
 If you don’t get fenugreek leaves, you can grow them on your own..It grows so easily in any climate..Take some fenugreek seeds and throw them in a small pot covered with mud…Sprinkle water often and within few days you can see tiny plants growing from that..You can use that as needed. Hope you are clear now, without any delay here you go to the recipe..

Ingrediants:
Brinjals – ½ kg cut into rounds
Onion- 1 large sliced
Tomato- 2 large chopped finely
Green Chilli – 1
Chilli Powder – 1tsp
Coriander Powder / Malli Podi -1 tblspn
Amchoor Powder / Dry Mango Powder -1 tsp
Turmeric Powder / Manjal Podi – ½  tsp
Cumin Seeds / Jeerakam -1 tsp
Kasuri Methi Leaves / Dried Fenugreek leaves – 1 tblspn
Curry leaves – 1 spring
Coriander Leaves / Cilantro – for garnishing
Sal to taste
Oil- 5 tblspn
For Batter:
Gram Flour / Kadalai Mavu / Besan – ½ cup
Chilli Powder – 1 tsp
Coriander Powder / Malli Podi -1 tsp
Amchoor Powder / Dry Mango Powder -1 tsp
Turmeric Powder / Manjal Podi – ½  tsp
Kasuri Methi Leaves / Dried Fenugreek leaves – 1 tblspn
Salt to taste
Method:
In a mixing bowl take gram flour and all the ingrediants given for batter except oil. Add water and make into a batter, it should be like dosa batter consistency.
Heat 1 tblspn of oil for one batch of frying brinjals in a tawa..Dip the Brinjals in this batter and fry it for 3 mins on each sides on a medium heat till cooked. Finish the entire batch like this. Remove them on to a plate and set them aside.
Heat 2 tblspn oil in a kadai. Add cumin seeds and let them crackle.
Now add onions and green chillies and mix well.
Add salt, chilli powder, coriander powder, turmeric powder, amchoor powder, kasuri methi leaves and mix well.
Throw in tomatoes and cook for 3-4 mins untill the tomatoes turn mushy. Add in curry leaves and toss well.
Throw in the cooked brinjal pieces and mix well in the masala.
Garnish with cilantro and serve hot with rice..

Pour some water and mix well
dip brinjals in this
and fry them in a tawa
cook on both sides till golden
remove onto a plate
Make Masala Now..Heat oil in a kadai
add cumin
now onions & green chilli
saute well
add salt
amchoor & turmeric
chilli & coriander
kasuri methi leaves
and tomatoes
mix well..Add curry leaves too
Toss well
Cook till tomatoes turn mushy
add brinjals
and mix well
add coriander leaves
and serve
Perfect with rice

    amazing.. i had no idea we can make baingans like this too.. upto making pakodas i got that then make onion tomato gravy and toss them there was exceptional.. normally i also dont like baingan much but when its disguised like this i would have it
