Vegetable Biryani Made in Pressure Cooker

Vegetable Briyani
Briyani is everyone’s favorite..But this one is for my vegetarian friends…It is a great food for kids since it has all vegetables…The best part in this briyani is the fried bread cubes and nuts…So try to add a lot of it..I am not using briyani masala in this..this is made entirely from scratch..Mum used to make briyani(her version is different),she used to serve it with raita,papad,tomato jam…The key thing in this briyani is fry the onions till golden brown..So please give this a try and let me know what you think..Please leave comments..

Ingrediants:
Basmati rice-2 cups(soaked for 30 min)
Onion-1 sliced
Tomato-2 chopped
Potato-1 cubed
Carrot-1 cubed
Beans-5 chopped
Capsicum-1 cubed
Peas-1 cup
Cauliflower-1 cup chopped
Green chilli-4 slited
Curd-1 cup
Mint leaves-1/2 cup
Coriander leaves-1/2 cup
Ginger Garlic paste-2 tblspn
Salt to taste
Oil-2 tblspn
Ghee-2 tblspn
Bread-4 slices cubed
Cashews-2 tblspn
Raisans-2 tblspn
Spice powders:
Red chilli powder-1 tblspn
Coriander powder-1 tblspn
Cumin powder-1 tsp
Turmeric powder-1 tsp
Garam masala powder-1 tsp
Whole spices:
Cardamom(yelakai)-4
Cloves(krambu)-4
Cinnamon(pattai)-1 inch piece
Bay leaves(briyani ilai)-1
Saunf(sombu)-1 tsp
Cumin seeds(jeera)-1 tsp
Method:
In a pressure cooker add oil+ghee and heat it up.Add in all whole spices and fry for 1 min.
Add in onion and fry till golden brown.Add in ginger garlic paste and mix well.Add in all spice powder and cook for 1 min.
Add in all vegetables and tomatoes and fry till every vegetable is coated with the lovely spices.
Add in green chilli,coriander and mint leaves and mix well.Pour in curd and give a stir.Add in peas and mix well.
Now put in the soaked basmati rice and fry for 1 min.Add in 2 cups of water(for 1 cup of rice add 1 cup of water).Bring that to boil and Cover the cooker. Cook it for 1 whistle and simmer for 5 mins. switch off the flame and let the steam go all by itself. Open the pressure cooker and fluff the rice.
Now fry the cashew,raisins in ghee and set it aside.Take the cubed bread pieces and fry then in oil till golden and crisp.Set this aside for a moment.
Mix in the bread pieces,cashew,raisins together..Garnish with coriander leaves.
Serve hot with raita.

Add some frozen peas..and mix well
add in rice and pour in water…
All cooked..
Bread and nuts fried for garnishing
Ready to Enjoy
