Ingredients
FOR CHICKEN:
▢
Boneless Chicken Thighs - 6
▢
Oregano - 1 tsp
▢
Chilli flakes - 2 tsp
▢
Salt to taste
▢
Black pepper to taste
▢
Cumin powder - 1 tsp
▢
Chilli Powder - 1 tsp
▢
Salt to taste
FOR RICE:
▢
Basmati Rice - 1.5 cup
▢
Oil - 3 tblsp
▢
Butter - 3 tblsp
▢
Onion - 1 chopped finely
▢
Garlic - 6 cloves chopped finely
▢
Tomatoes - 2 chopped finely
▢
Capsicum - 1 chopped finely
▢
Mushrooms - 10 chopped
▢
Broccoli - 1 cup
▢
Vegetable stock or Chicken Stock - 3 cups
▢
Salt and pepper to taste
Instructions
▢
Mix chicken with spices and set aside.
▢
Heat oil and butter in a pan, add in onions, garlic and saute for 2 mins.
▢
Add in veggies and stir fry for 2 mins.
▢
Add in rice and stir well.
▢
Add in stock and bring it to a boil. Add salt and pepper to taste
▢
Add chicken in and cover and cook on low heat for 15 to 20 mins.
▢
Serve.
