Orange Muffin Recipe made bakery style which has a lovely citrus note to it from the orange juice and zest. Tender muffins which is perfect to bake when oranges are abundant in season. These moist fluffy muffins looks fluffy just like vanilla muffins. Bonus no mixer needed!
Preheat oven to 200 degree c. Grease a muffin tray with oil and set aside.
Take egg, sugar, oil, orange juice and mix well. Use a micro-plane zester and zest an orange in to the batter.
Now Add in flour and baking powder and fold gently to create a thick batter.
Scoop the batter into a greased muffin mould using an ice cream scoop. Fill the batter right to the top and bake for 18 to 20 mins.
Remove from oven and let it cool in the mould for 5 mins. Now remove the muffins to a cooling rack and serve.

Notes
You can use half all purpose flour and half wheat flour.
You can reduce the sugar quantity if you want.
Instead of oil you can use melted butter.
Chocolate chips, chopped nuts can be used in the batter.
Storage & Serving
This muffins will stay good for 2 to 3 days at room temperature. Store in fridge for upto a week. You can warm it in microwave for few seconds before serving.
