Carrot Paruppu Usili Recipe
Healthy and highly nutritious carrot paruppu usili which taste so yummy with any spicy curry. This is best with some hot rice too.

Ingredients
▢
Carrot - 2 chopped finely
▢
Coconut Oil - 2 tblsp
▢
Mustard Seeds / Kaduku - 1 tsp
▢
Urad dal / Ulundu Paruppu - 1 tsp
▢
Dry Red Chillies - 2
▢
Asafoetida / Hing / Kaya Podi a pinch
▢
Curry leaves - 1 sprig
▢
Salt to taste
FOR DAL:
▢
Yellow Split Moong Dal / Pasi Paruppu - 1 cup
▢
Dry Red Chillies - 2
▢
Garlic - 3
▢
Asafoetida / Hing / Kaya Podi - ½ tsp
Instructions
▢
Soak moong dal for 1 hour. Drain and take it in a blender along with all ingredients given for grinding.
▢
Grind till coarse. Spoon it in idli plate and steam for 10 mins. Take it in a bowl and crumble it.
▢
Heat oil in a pan, add seasoning ingredients and carrots. Add salt and saute for 10 mins till cooked.
▢
Add dal and extra salt and mix well.
▢
Cook for 5 to 10 mins.
▢
Serve.
