Eggplant

Lemon Juice

Salt to taste
Instructions
▢
Wash and pat dry eggplant. Roast them on open flame till it is charred. Remove and cool it down. Peel off the skin and cut into small pieces.
▢
Now take tahini, lemon juice , salt, garlic and coriander in a blender and whiz till smooth.
▢
Add eggplant and pulse once.
▢
Remove to a bowl, drizzle with olive oil and serve with pita chips.
