Ingredients
▢
Oil - 3 tblsp
▢
Onion - 1 chopped finely
▢
Tomato - 2 chopped finely
▢
Curry leaves a sprig
▢
Brinjal - 2 chopped
▢
Salt to taste
▢
Turmeric Powder - 1 tsp
▢
Chilli powder - 2 tsp
▢
Tamarind - 3 tblsp
▢
Water - 2 cups
▢
Jaggery - 2 tblsp
Instructions
▢
Heat oil in a pan. Add in onions, curry leaves and saute till golden.
▢
Add tomato and cook till mushy.
▢
Add in brinjal and mix well.
▢
Add in salt, chilli powder, turmeric powder and mix well.
▢
Add in tamarind and cook till brinjal is done.
▢
Add in jaggery and mix well.
▢
Serve.
