Peel and slice potatoes thinly using a mandoline. Chop garlic really fine. Set aside.
Take oil in a bowl, add in all the ingredients except cheese in and mix well.
Add the potatoes in toss well in the oil.
Take a muffin pan. Place couple slices of potatoes, sprinkle little cheese over it. Then top with couple more slices of potatoes and sprinkle more cheese, add couple more slices of potatoes and more cheese and some more potatoes and finally top with more cheese.
Now pop this in a 180 degree c preheated oven and bake for 30 to 40 mins.
Remove and let it stand for 5 mins before un moulding and serving.

TIPS & TRICKS
Make sure you choose potatoes that fits your muffin mould.
Slice the potatoes using a mandolin slicer.
You can use any cheese as you like, cheddar, gruyere or anything you prefer.
Instead of olive oil you can use melted butter.
Use any spices and dried herb as you like.
Finely chopped fresh parsley can be added as well.
