Maladu Recipe | Nei Urundai Recipe | Roasted Gram Ladoo
Maladu or Nei Urundai is a ladoo made using roasted gram dal, sugar, ghee and nuts. Highly nutritious sweet made with dal which can be made in less than 15 minutes perfect for diwali or any festive occasions. Learn how to make it with step by step pictures and video.
Heat ghee in a pan. Add in cashews and fry till golden brown. Strain and set aside in a bowl. Reserve the ghee for making ladoo.
Take a blender. Add in gram dal, sugar, cardamom and blend it until this becomes into a fine powder. Now empty this into a mixing bowl. Add in fried cashews and mix evenly.
Now pour warm ghee on the powdered mixture and start mixing evenly with your hands. make sure the ghee is not hot, it has to be warm.
Mix ghee evenly over the mixture and start forming tight ladoos. You have to give some pressure to form this ladoo. If you need more ghee you could add more.
Place the ladoos carefully on to a plate or a box and enjoy or give as presents.

Make the gram dal into a fine powder. You can pass this through to fine mesh sieve to make it extra fine.
Any nuts can be used. Preferred nuts are cashews, almonds, walnuts. Chop nuts very fine before frying.
Use best quality ghee for making ladoos.
Ghee has to be warm when you pour into the powdered gram dal mixture. If you add too hot then sugar will melt too much which makes it hard to shape.
Shelf Life & Storage
Maladu or nei urundai doesn't have any moisture like water or milk. So this keeps well at room temperature for more than a week. You can store them in an air tight container for a week.
