KFC chicken is one of the most popular chicken dish all over the world. The fried chicken is crispy, juicy and flavourful. Kfc Original fried chicken is easy to make with secret spice mix added.
Take cleaned chicken in a bowl. Add salt, sugar, lemon juice and lemon peel in the bowl. Cover with cold water. Set this bowl in fridge for at least 2 hours to overnight. Once the chicken is brined. Strain and rinse it really well. Set aside.
Seasoned Flour
Mix flour, cornstarch, with all the spices, herbs and baking powder. Mix really well and set aside. This is seasoned flour.
Preparation of KFC
Take ice cold water in a bowl. Dip the chicken in cold water for 7 seconds. Remove it and add to seasoned flour, squeeze it really well so the flour coats the chicken well. Place it on wire rack. Prepare the remaining few pieces the same way.
Frying KFC
Heat oil for deep frying. Make sure you have a lid for the pot you use. Drop chicken in hot oil and fry for 7 mins covered. Remove the lid, flip the chicken and cook for another 7 mins. Flip one more time and fry till golden brown. Remove the chicken using a pair of tongs and place the fried chicken on a wire rack. Let it drain for 2 mins. Serve hot.

Brine the chicken to infuse maximum flavour in chicken and make the chicken moist and juicy even after frying.
Use chicken with skins on and bone in. The skins is what gives super crispy chicken.
Make sure the seasoned flour is heavily seasoned, since it is only flavour you add to the chicken.
Squeeze the chicken well when coating it in seasoned flour. This adds the flaky texture to the chicken.
Fry the chicken covered during the first 7 minutes. This ensure the chicken cooks all the way through.
Make sure you adjust the heat accordingly when frying.
