Brinjal Bell Pepper Masala Recipe

Easy and quick side dish for rice is this brinjal bell pepper masala. This taste amazing with roti, rice or any main dish.

Ingredients

  • Oil - 3 tblspn
  • Fennel Seeds / Sombu / Saunf - 1 tsp
  • Onion - 1 large sliced thinly
  • Bell Pepper - ½ sliced thinly
  • Tomatoes - 2 large chopped finely
  • Brinjal - 1 large sliced thinly
  • Salt to taste
  • Turmeric Powder - 1 tsp
  • Chilli Powder - 1 tsp
  • Coriander Powder - 1 tblspn
  • Cumin Powder - 1 tsp
  • Garam Masala Powder - 1 tsp

Instructions

  • Heat oil in a kadai. Add fennel and let them sizzle.
  • Add onions and peppers along with salt and turmeric and mix well. Cook till onions soften.
  • Add in tomatoes and cook that down till mushy.
  • Add in spice powders and mix well.
  • Now add in brinjal and toss well in the masala.
  • Cover and cook for 10 to 15 mins.
  • Now it is done.
  • Serve over rice.
