Ingredients

  • 1 tsp Oil
  • 1 medium size Onions
  • 4 large cloves Garlic
  • ½ cup Celery
  • ½ cup Carrots
  • ½ cup Capsicum / Bell Pepper
  • ½ cup Beans
  • ½ cup Cabbage
  • ½ cup Purple Cabbage
  • 100 grams Soba Noodles
  • Salt to taste
  • 1 tsp Sugar
  • Pepper to taste
  • 2 tsp Soya Sauce
  • 1 tsp Vinegar
  • 2 tbsp Tomato Ketchup
  • 3 to 4 cups Vegetable Stock or Water
  • 2 tbsp Cornflour / Cornstarch
  • ¼ cup Water
  • Spring onion a handful finely chopped

Instructions

  • Heat oil in a soup pot. Add in garlic and fry for a min.
  • Add in onions, capsicum, celery, carrots, beans and saute for 5 mins or so.
  • Add in cabbage and saute for 5 to 8 mins. till it shrinks.
  • Now add in water or stock and bring it to a boil.
  • Add in soba noodles and cook for 5 mins or so..
  • Add in soy sauce, ketchup. vinegar, salt, sugar and pepper and mix well.
  • Add in cornflour which is mixed with water into this and mix well. Cook till it thickens slightly.
  • Finally add lots of chopped spring onion and mix well.
  • Serve hot.
