Stuffed Buns | Potato Masala Buns Recipe

Stuffed Buns, these spicy potato masala buns is a popular snacks in Iyengar bakery. This dish is made with a spicy potato masala which is stuffed inside yeasted dough and shaped into buns which is similar to veg puffs. These baked buns are so delicious when served on its own or with a cup of tea or coffee. Learn how to make stuffed buns with step by step pictures and video.

Ingredients

For Dough

  • 1 cup Wheat Flour
  • 1 cup All Purpose Flour | Maida
  • 2 tsp Dry Yeast
  • 2 tbsp Sugar
  • 2 tsp Salt
  • 2 tbsp Butter
  • 1 cup Warm Water

For Filling

  • 2 tbsp Oil
  • 1 tsp Fennel seeds
  • 1 sprig Curry leaves
  • 1 large Onion chopped finely
  • 1 no Green Chillies chopped finely
  • 1 tbsp Ginger Garlic Paste
  • 1 large Tomato chopped finely
  • 1 large Potato boiled and mashe
  • ½ cup Green peas
  • 1 no Carrot
  • 1 cup Cauliflower
  • 2 tsp Kashmiri chilli powder
  • 1 tsp Turmeric powder
  • 1 tsp Garam masala powder
  • Salt to taste
  • 3 tbsp Coriander leaves chopped finely

Instructions

  • Let's make potato filling. First take veggies in a pressure cooker, cover with 1 cup of water. Pressure cook for 2 whistle. Let the steam release by itself. Set aside. In a frying pan heat oil, add in fennel seeds and curry leaves. let them sizzle. Add in onions, green chillies and mix well. Add in ginger garlic paste and cook till raw smell leaves. Add in tomatoes cook till mushy. Add in red chilli powder, turmeric powder, garam masala powder, salt and mix well. Add in cooked veggies and mash it using a potato masher. Add coriander leaves and mix well. Potato Filling is ready.
  • Let's make the bun dough. Take warm water, sugar, yeast in a mixing bowl. Let the yeast activate for 5 mins. It will get foamy. Now add in wheat flour, plain flour, salt and mix well using a spoon. Add in soft butter and knead it well. Knead it for 5 minutes till the dough is smooth. Cover the dough with a cloth and let it rest for 1 hour till it doubles in size.
  • Transfer the dough into a silicon mat or work surface. Divide the dough into 8 equal balls and set it aside. Take the dough ball and flatten it slightly, place the filling inside this and seal it from all edges. Make it into a round shape and place on a foil lined baking sheet. Make every dough like this and place it in a baking sheet leaving some space between them, because they will expand.
  • Cover it with a cloth and let it rise for 30 to 45 minutes. If you want you could brush the buns with a beaten egg or milk. Sprinkle top with sesame seeds.
  • Now place this in a 200 degree C preheated oven for 20 minutes till lightly golden on the top. Remove it from the oven and brush it with some butter and serve warm.

Notes

  • You can use complete wheat flour instead of all purpose flour.
  • You can make the filling and dough a day in advance and store in fridge. You can shape the buns next day and bake.
  • Instead of using mixed veggies, you can use potatoes alone.
  • Top shredded cheese over the filling and shape buns.

Serving & Storage

You can serve buns warm on its own or with some tomato ketchup.
Leftover buns can be stored in fridge and reheated in microwave or oven for few seconds.
