Mix ingredients given for potato latkes together except oil.
Heat oil in a frying pan and add a spoonful of this mixture in the oil, they will spread and form into a disc shape.Fry this on both sides till golden .
Remove this and drain in a paper towel.
For coleslaw:
Bring 1 cup of water to a rolling boil.Now add in the shredded cabbage and carrot in that water.let it sit in that for 3min.
Drain the veggies in a cheese cloth and squeeze the water from it.
Add some mayonnaise, salt, pepper and mix well.
Assembling:
Take the burger bun and toast it lightly.
Place a spoonful of coleslaw and top it over the bun.
Place 2-3 pieces of potato latkes over the top and add another dollop of coleslaw over this..
Cover it with the other piece of bun..
Serve immediately or cover it with foil and enjoy in lovely picnic spot.
