Wash and soak basmati rice for 30 mins. Soak saffron in warm milk and set aside.
Heat oil in a pot. Add in cumin seeds and ginger garlic paste and saute for a min.
Add in the veggies and some salt. Saute it for couple of mins. Cover and cook for 5 mins.
Now add in green chillies and saute for a min.
Now add in yogurt and cream and mix well.
Add in masala powder and mix well. Simmer for few more mins.
Now add in coriander and mint leaves and mix well.'
Meanwhile cook basmati rice till it is 90 percent done, Drain it and add it to the top of the veggie mix.
Heat some ghee in a pan, add in cashews and raisans and fry till golden. Add in onions and fry till golden brown.
Now pour this over the rice, top with coriander and mint leaves and spoon over saffron milk. Cover with a tight lid and put on low flame and let it be on dum for 15 to 20 mins.
If you are using bread, fry till golden. Drain it and add to the rice and fluff the rice.
