Ingredients

  • Olive Oil - 2 tsp
  • Garlic - 5 cloves chopped finely
  • Onion - 1 medium size chopped finely
  • Tomato Puree - 1 cup
  • Vegetable Stock or Chicken Stock - 2 cups
  • Chicken Breast - 1 large chopped finely
  • Chilli Powder - 1 tsp
  • Cumin Powder - 1 tsp
  • Pepper Powder - 1 tsp
  • Salt to taste
  • Sugar - ½ tsp
  • Oregano - 1.5 tsp
  • Cooked Rice - 1.5 cup
  • Coriander leaves a handful finely chopped
  • Lime Juice - 2 tsp or to taste

Instructions

  • Heat oil in a pan, add in garlic and onion and saute for couple of mins.
  • Now add in tomato puree, stock, chilli powder, cumin powder, pepper powder, salt and sugar.
  • Add in oregano as well. Bring it to a boil.
  • Add in chicken and simmer for few mins till chicken is cooked.
  • Now add in rice and simmer for few mins.
  • Now add in coriander leaves and lime juice and mix well.
  • Serve.
