Ingredients

  • 5 tbsp Olive Oil
  • 2 cups Pasta any variety, i used spirals
  • 6 cloves Garlic chopped
  • 1 medium size Onion chopped very finely
  • 1 medium size Carrot chopped very finely
  • 1 medium size Celery chopped very finely
  • 4 large Tomatoes pureed
  • 1 large Zucchini cubed
  • 1 tsp Chilli Powder
  • Salt to taste
  • 1 tsp Sugar
  • ¼ cup Tomato Ketchup
  • 1 tsp Oregano
  • Parmesan as needed for serving

Instructions

  • Heat olive oil in a pan, add in cubed zucchini and fry them till golden, drain to a plate.
  • In the same oil, add in chopped garlic, and fry for few mins.
  • Add in onions, celery and carrot. cook this till it gets golden.
  • Add in the tomato puree and cook till oil separates.
  • Now add in chilli powder, oregano, salt, sugar and ketchup. Mix well.
  • Add in some water and simmer for few mins.
  • Then add in the fried zucchini and mix well. Sauce done.
  • When the sauce is cooking, you can cook the pasta in lots of boiling salted water as per package directions.
  • Drain them and add it to the sauce.
  • You can add some of the cooking water which you drained too.
  • Top with lots of grated parmesan before serving
