Ingredients

Olive Oil

Pasta
any variety, i used spirals

Garlic chopped

Onion chopped very finely

Carrot chopped very finely

Celery chopped very finely

Tomatoes pureed

Zucchini cubed

Chilli Powder

Tomato Ketchup

Parmesan as needed for serving
Instructions
▢
Heat olive oil in a pan, add in cubed zucchini and fry them till golden, drain to a plate.
▢
In the same oil, add in chopped garlic, and fry for few mins.
▢
Add in onions, celery and carrot. cook this till it gets golden.
▢
Add in the tomato puree and cook till oil separates.
▢
Now add in chilli powder, oregano, salt, sugar and ketchup. Mix well.
▢
Add in some water and simmer for few mins.
▢
Then add in the fried zucchini and mix well. Sauce done.
▢
When the sauce is cooking, you can cook the pasta in lots of boiling salted water as per package directions.
▢
Drain them and add it to the sauce.
▢
You can add some of the cooking water which you drained too.
▢
Top with lots of grated parmesan before serving
