Paal Kozhukattai Recipe | Paal Kolukattai Recipe | How to Make Paal Kozhukattai

Paal Kozhukattai made with rice flour, milk, sugar, cardamom powder and coconut milk. Kozhukattai or Rice flour Dough is shaped into small balls and cooked in a coconut milk sauce and sweetened with sugar or jaggery. Ingredients

  • 1 cup Rice Flour / Arisi Mavu I used readymade rice flour
  • ½ tsp Salt
  • 1 tsp Ghee
  • 1 cup Boiling Water
  • 3 cups Milk
  • 1 cup Water
  • ¾ cup Sugar
  • 1 cup Coconut Milk
  • 1 tsp Cardamom Powder

Instructions

  • Take rice flour in a bowl, add salt and ghee. Pour boiling water into the rice flour and Mix well using a spoon. once the rice flour and water is combined. Leave aside for 5 mins and then knead using your hands till soft dough forms.
  • Apply ghee on your fingers. Take small portions from it and form into tiny little balls.
  • Now in a deep pot. Add in milk, water and bring it to a full boil. Keep mixing so the milk doesn't burn in the bottom.
  • Once it starts boiling add the small kolukattai in the milk slowly. The milk should be always boiling when you add the kolukattai else it may disintegrate. So add the balls slowly, don't add it all at once.
  • Let this cook for 10 mins. Mix inbetween gently. Now add in sugar and stir to combine. Let it cook for another 5 to 8 mins.
  • Now add in coconut milk and cardamom powder and mix well. Mix well and serve.
  • Serve this warm or at room temp.

Tips & Tricks

  • When you are using jaggery in this recipe. Never add it directly to milk or coconut milk and boil. Because it may curdle.
  • When adding jaggery dissolve in water and make it into a syrup and then add it to the mixture. Also never boil jaggery once you add it in the dish.
  • Make the dough with hot water or cook the dough so it stays soft.
  • You can serve paal kozhukattai hot or cold.
  • Paal kozhukattai dough can be made in advance and stored covered for few hours.
  • Always add the shaped balls once the milk or water starts to boil.
  • You can use cardamom powder or dry ginger powder.

How & When to Serve Paal Kozhukattai

  • You can serve paal kozhukattai hot or cold. But I like it to be served warm.
  • Ganesh chaturthi is the perfect occasion to serve paal kozhukattai. Since it is loved by lord ganesha.
  • You can serve this on any occasions like tamil new year or even for parties and gatherings.
