Ingredients

  • 10 Brinjal small variety
  • 1 large Onion chopped
  • 6 cloves Garlic peeled
  • 2 tbsp Tamarind
  • 1 tsp Chilli Powder
  • 1 tbsp Coriander Powder
  • 1 tsp Turmeric Powder / Manjal Podi
  • 1 tbsp Jaggery / Sugar
  • Salt to taste
  • For Roasting and Grinding:
  • 2 Dry Red Chilli
  • 2 tbsp Coriander Seeds / Malli
  • 1.5 tbsp Channa Dal / Kadalai Paruppu
  • 1.5 tbsp Toor Dal / Tuvaram Paruppu
  • ½ cup Coconut grated
  • Salt to taste
  • For Seasoning:
  • 5 tbsp Oil
  • 1 tsp Mustard Seeds / Kaduku
  • 1 tsp Cumin Seeds / Jeerakam
  • 1 Dry Red Chilli
  • 1 tsp Urad Dal / Ulundu Paruppu
  • ¼ tsp Asafoetida / Hing / Kaya Podi

Instructions

  • Dry roast the ingredients given for roasting till golden, take them in a blender add little salt. and grind them to a fine powder. Set aside.
  • Take brinjal cut them into four, stuff with the masala.
  • Heat oil in a pan, add in the seasoning ingredients and let them sizzle.
  • Now add in onion, garlic and saute them for a min with salt.
  • Add in the brinjal, chilli powder, coriander powder and turmeric powder. Toss well.
  • Add in salt and tamarind pulp. Add the leftover masala as well. Add in jaggery and cover with water as needed.
  • Cover the pot and let it simmer till it thickens and oil floats on top.
  • Serve.
