Ingredients

  • 2 sliced into rounds Green Long Brinjal
  • ½ cup grated Coconut
  • 3 tblspn Oil
  • 1 tsp Mustard seeds / Kaduku
  • ¼ tsp Fenugreek seeds / Vendayam / Methi
  • 1 tsp Urad dal / Ulundu Paruppu
  • a pinch Asafoetida / Hing / Kaya podi
  • 2 sprig Curry leaves
  • 1 medium size chopped Onion
  • 10 peeled Garlic
  • 3 tblspn Chettinad Kuzhambu Masala Powder
  • Water as needed
  • 2 tblspn Tamarind Pulp
  • Salt to taste
  • 1 tspMethod: Sugar

Instructions

  • Grind coconut into smooth paste. Set aside
  • Heat oil in a kadai. Add in mustard, urad dal, fenugreek and curry leaves.
  • Now add in onions, garlic and saute for a min.
  • Add in brinjal and saute well.
  • Add in the masala powder and saute well.
  • Add in water, tamarind pulp, salt and sugar and mix well. now simmer this whole thing for 10 mins.
  • Add in coconut and mix well. Simmer for 10 mins.
  • Serve.
