Ingredients

  • 10 to 15 slices Sponge Cake
  • Simple Syrup as needed Recipe below
  • 10 to 12 Passion Fruit or any fruit
  • 1 cup Cream I used 25% fresh cream
  • 2 tbsp Powdered Sugar
  • 1 tsp Vanilla Essence
  • For Simple Syrup:
  • ½ cup Sugar
  • 1 cup Water

Instructions

  • Cut open passion fruit and remove the seeds into a bowl.
  • Make simple syrup by heating sugar and water in a sauce pan, cook till the sugar is melted. Set aside in fridge till cold.
  • Take cream, sugar and vanilla in a bowl. Whip till thick. Add some of the passion fruit pulp into it and fold gently. Put in the fridge till needed.
  • Line the base of the bowl with the cake. Spoon the syrup all over it.
  • Pour some of the passion fruit pulp over it.
  • Spread cream all over it.
  • Spoon some more passion fruit over it.
  • Chill into the fridge overnight.
  • Serve cold
