Ingredients

  • 1 large Brinjal / Baingan
  • 2 tbsp + for shallow frying Oil
  • ½ tsp Mustard Seeds / Kaduku
  • ½ tsp Cumin Seeds / Jeerakam
  • 1 medium chopped finely Onion
  • 2 chopped Green Chillies
  • 1 tsp Ginger Garlic Paste
  • 1 tsp Chilli Powder
  • 2 tsp Coriander Powder / Malli Podi
  • 1 tsp Turmeric Powder / Manjal Podi
  • Salt to taste
  • 2 Tomatoes chopped finely
  • 1 cup Water

Instructions

  • Cut brinjal into thick rounds, now cut each rounds into strips.
  • Heat oil for shallow frying. Drop brinjal in and fry till golden. Remove and set aside.
  • Now drain most of the oil from the pan, keep just 2 tblspn in it.
  • Add in mustard and cumin. let them pop.
  • Now add in onions, chillies and saute till golden.
  • Add in ginger garlic paste and saute for a min or so.
  • Add in salt and spice powders and mix well.
  • Now add in tomatoes and cook for couple of mins, add in a splash of water and cook till tomatoes turn mushy.
  • Now add in another splash of water and when it starts to bubble, add in fried brinjal and mix. Simmer for 5 mins or so.
  • Serve.
