Ingredients

large Brinjal / Baingan
▢

tbsp
+ for shallow frying Oil

Mustard Seeds / Kaduku
▢

tsp
Cumin Seeds / Jeerakam

medium chopped finely Onion
▢

chopped Green Chillies
▢

Ginger Garlic Paste

Chilli Powder

Coriander Powder / Malli Podi

Turmeric Powder / Manjal Podi

Salt to taste

Tomatoes chopped finely

Instructions
▢
Cut brinjal into thick rounds, now cut each rounds into strips.
▢
Heat oil for shallow frying. Drop brinjal in and fry till golden. Remove and set aside.
▢
Now drain most of the oil from the pan, keep just 2 tblspn in it.
▢
Add in mustard and cumin. let them pop.
▢
Now add in onions, chillies and saute till golden.
▢
Add in ginger garlic paste and saute for a min or so.
▢
Add in salt and spice powders and mix well.
▢
Now add in tomatoes and cook for couple of mins, add in a splash of water and cook till tomatoes turn mushy.
▢
Now add in another splash of water and when it starts to bubble, add in fried brinjal and mix. Simmer for 5 mins or so.
▢
Serve.
