Ingredients

  • 3 to 4 cups Idli Batter
  • Oil as needed for making paniyaram
  • For Seasoning:
  • 1 tbsp Oil
  • 1 tsp Mustard Seeds / Kaduku
  • 1 tsp Urad Dal / Ulundu Paruppu
  • Asafoetida / Hing / Kaya Podi - a pinch
  • Curry Leaves a sprig
  • 12 to 15 chopped finely Shallots / Sambar Onion
  • 2 chopped finely Green Chilli
  • 1 tbsp finely chopped Ginger
  • ½ cup grated Coconut
  • Coriander leaves a handful chopped finely
  • Salt to taste

Instructions

  • Heat oil in a pan, add in mustard and urad dal. let them splatter.
  • Add in asafoetida, curry leaves and mix well.
  • Now add in onions, ginger, green chillies, salt and saute for 2 mins.
  • Add in coconut and coriander leaves. Toss well.
  • Then add this to idli batter. Mix well.
  • Heat a kuzhi paniyaram pan with some oil. POur batter in and cook on low flame till it crisp up a little.
  • Now flip over and cook.
  • Remove and serve.
