Ingredients

Garlic finely chopped

medium size Capsicum chopped

large Potato peeled and cubed

Red Chilli Flakes to taste

Cheese grated

Parsley / Coriander leaves as needed finely chopped

Tortilla

Pico De Gallo as needed for topping
Instructions
▢
Crack open eggs in a bowl, add in chilli flakes and salt. Mix well and set aside. If you want you can add some cheese into the egg mix.

Heat oil in a pan, add in garlic and saute for a min.
▢
Add in onion, peppers and saute it till it gets nice color.
▢
Add in potatoes and toss and cook this till it gets golden. Add in red chilli flakes and salt. Cover and cook on a low heat for 15 mins.

Now add in eggs, cook it till it get cooked as per your liking.
▢
Now take a tortilla and place it in front of you, spoon some of the egg potato filling, spoon some pico de gallo and wrap it well.
▢
Cover with foil and serve warm.
