Ingredients

  • 2 tbsp Oil
  • 2 tbsp Garlic finely chopped
  • 1 medium size Onion chopped
  • 1 medium size Capsicum chopped
  • 1 large Potato peeled and cubed
  • 6 to 8 Eggs
  • Red Chilli Flakes to taste
  • Salt to taste
  • 1 cup Cheese grated
  • Parsley / Coriander leaves as needed finely chopped
  • 4 to 6 Tortilla
  • Pico De Gallo as needed for topping

Instructions

  • Crack open eggs in a bowl, add in chilli flakes and salt. Mix well and set aside. If you want you can add some cheese into the egg mix.
  • Heat oil in a pan, add in garlic and saute for a min.
  • Add in onion, peppers and saute it till it gets nice color.
  • Add in potatoes and toss and cook this till it gets golden. Add in red chilli flakes and salt. Cover and cook on a low heat for 15 mins.
  • Now add in eggs, cook it till it get cooked as per your liking.
  • Now take a tortilla and place it in front of you, spoon some of the egg potato filling, spoon some pico de gallo and wrap it well.
  • Cover with foil and serve warm.
