Ingredients

  • 3 to 4 Eggs
  • 1 tbsp + more for making omelette Oil
  • 3 chopped finely Garlic
  • 1 chopped finely Onion
  • 2 chopped finely Spring Onion
  • ¼ chopped finely Capsicum / Bell Pepper
  • 2 cups sliced thinly Mushrooms
  • 1 tsp Soy Sauce
  • ½ tsp Oregano
  • Salt to taste
  • Pepper to taste

Instructions

  • Crack open eggs in a bowl and add a tsp of soy sauce. Mix well.
  • Now heat oil in a pan, add in garlic, spring onions, onions, capsicum and saute for few mins.
  • Now add in mushrooms and saute them on high heat till it is well browned. It will take around 5 to 7 mins.
  • Add in oregano, salt and pepper and mix well.
  • Now add this into the eggs and mix well.
  • Heat oil in a pan, pour small omelettes and cook them till it is done and set on the bottom. Now flip over and cook till golden on other side.
  • Now remove it and serve with toast.
