Ingredients

  • 1 tsp Oil
  • 1 large Onions medium size chopped finely
  • 4 cloves Garlic chopped finely
  • 3 sticks Celery chopped finely
  • 1 Carrots chopped finely
  • ½ Capsicum / Bell Pepper chopped finely
  • 5 Beans chopped finely
  • 3 cups Cabbage chopped finely
  • 3 cups Purple Cabbage chopped finely
  • 1 tbsp Oregano
  • 2 cups Tomato Puree
  • Salt to taste
  • Pepper to taste
  • 5 to 6 cups Vegetable Stock or Water
  • 2 tbsp Cornflour / Cornstarch
  • ¼ cup Water

Instructions

  • Heat oil in a soup pot. Add in garlic and fry for a min.
  • Add in onions, capsicum, celery, carrots, beans and saute for 5 mins or so.
  • Add in cabbage and saute for 5 to 8 mins. till it shrinks.
  • Now add in water or stock, tomato puree, oregano, salt and pepper and mix well.
  • Bring it to a boil and simmer for 20 to 30 mins.
  • Add in cornflour which is mixed with water into this and mix well. Cook till it thickens slightly.
  • Serve hot.
