Ingredients

  • Dosa Batter as needed
  • Oil as needed
  • For Potato Masala:
  • 1 tbsp Oil
  • 1 tsp Mustard Seeds / Kaduku
  • 1 tsp Urad dal / Ulundu Paruppu
  • Curry leaves a sprig
  • a pinch of Asafoetida / Hing / Kaya Podi
  • 1 medium size Onion chopped finely
  • 2 tsp Ginger chopped finely
  • 2 Green Chillies chopped finely
  • 1 medium size Carrot chopped finely
  • 2 large Potato - boiled peeled and mashed
  • 1 tsp Turmeric Powder / Manjal Podi
  • Salt to taste
  • Coriander leaves a handful chopped finely

Instructions

  • Heat oil in a pan, add in mustard, urad dal, asafoetida and curry leaves. Let them sizzle.
  • Add in ginger and saute for a min.
  • Now add in onions, carrots, chillies and saute well.
  • Add in salt and turmeric powder. Mix well.
  • Then add in some water and bring it to a boil.
  • Add in mashed potatoes and mix well.
  • Throw in the coriander leaves and mix well. Masala done.
  • Heat a dosa pan, spoon a ladleful of batter, spread it evenly.
  • Spread some masala over it, dollop some more batter and spread it.
  • Drizzle oil over it, cook till the bottom is done, flip over and cook for few more sec.
  • Serve.
