Ingredients

  • 1 ½ cup All Purpose Flour (180 grams )
  • 1 cup Granulated Sugar (200 grams )
  • 2 Eggs
  • 3 tbsp Olive Oil
  • ½ cup Plain Yogurt (120 ml )
  • Orange Zest from 2 oranges
  • Orange Juice from 1 orange
  • 1 tsp Baking powder
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • 1 tsp Vanilla Essence

Instructions

  • Preheat the oven to 170 Degree C / 340 Degree F.
  • Take flour, baking powder, baking soda and salt in a bowl and mix well. Set this aside till use.
  • Zest couple of oranges and juice one whole orange and set aside.
  • Line the bottom of the loaf pan with parchment paper and oil all the sides of the pan. Set this aside till use.
  • Take eggs, sugar, vanilla in a large bowl and mix well.
  • Add in oil and mix till it is combined.
  • Add in curd and mix well.
  • Now add in the orange zest and orange juice and mix well.
  • Now add in the flour mixture and combine it gently.
  • Pour this entire thing into the loaf pan and bake it for 45-50 mins.
  • Remove from the pan and check whether it is cooked by inserting a toothpick.
  • Let it cool completely before removing from the tin.
  • Slice and Serve.

Notes

1) This cake is not that much sweet, since i made it to have along with tea i didn't add much sugar. You can increase the amount of sugar.
2)To cut the cake without breaking the cake, just put the loaf in the fridge for couple of hours or in the freezer for 30 mins and then cut it.
3) Every oven varies..So keep a eye on the cake.
