Ingredients

  • ½ kg Brinjals Chopped
  • ½ tsp Cumin Seeds
  • ½ tsp Mustard Seeds
  • ½ tsp Turmeric Powder
  • Salt to taste
  • 3 tbsp Oil
  • Coriander Leaves for garnishing
  • To Grind:
  • 1 tbsp Coriander Seeds
  • 1 tsp Cumin Seeds
  • 3 Green Chilli

Instructions

  • Grind all the ingredients given to grind. Grind it to a fine paste and set aside.
  • Heat oil in a kadai. Add cumin and mustard seeds and mix well.
  • Add turmeric powder and mix well. Add brinjals and mix well.
  • Cover and simmer for 5 mins until half cooked.
  • Now add in ground masala and mix well. Cook uncovered for 5 mins until the brinjal is cooked  and slight crisp.
  • Garnish with coriander leaves and serve hot with rice.
