Ingredients

  • 2 cup All Purpose Flour (240 grams)
  • ¼ tsp Salt
  • 1 tsp Baking Soda
  • ¼ cup Oil 60 ml
  • ½ cup Sugar 100 grams
  • 1 tsp Vanilla Essence
  • 1 cup Dates chopped into small pieces
  • ½ cup use any nuts chopped Almonds / Badam
  • 1 tbsp Flax Seed Meal
  • 1 ¼ cup Water 300 ml

Instructions

  • Prepare a loaf pan by greasing it with oil and dusting it with flour. Refer this post for detail pics.
  • Take water in a sauce pan and bring it to a boil. Now pour ¼ cup of water over flax seed meal and mix well. Set aside.
  • Now pour the remaining 1 cup of water over chopped dates, add in some baking soda and mix well. Set aside till it gets cold.
  • Now preheat the oven to 180 Degree C. If using pressure cooker for baking this, refer this post.
  • Now take oil, sugar and vanilla in a bowl and mix well.
  • Add the flaxseed mix and beat well.
  • Add in half the flour mix and fold gently. Add in the dates mix and the remaining flour mix. Fold gently.
  • Now fold in the chopped almonds and mix gently.
  • Pour this into a prepared loaf pan and bake it in a pressure cooker for 1 hour. If you are baking it in oven bake it for 50 mins to 1 hour.
  • Check by inserting a tooth pick and see. If the tooth pick comes out clean then it is done.
  • Remove it and let it cool for 15 mins in the pan. Invert it and allow it to cool completely. Slice and serve.
