China Grass Pudding Recipe | Kadal Paasi Dessert

China grass pudding also known as agar, agar pudding or Kadal Paasi is a popular dessert made in southern part of India specially during Ramadan. This pudding is made using coconut milk, sugar, china grass and cardamom. It is easy to make and great for parties and get togethers just like my agar agar pudding and rose pudding. Equipment

  • Cooking pot
  • Glass Pan for Setting Pudding
  • Spatula
  • Sieve or Strainer

Ingredients

  • 5 grams Agar Agar Powder | China Grass (2 tsp)
  • ½ cup Water
  • 500 ml Thick Coconut Milk
  • ¾ cup Sugar
  • 3 no Cardamom crushed
  • 1 tbsp Almonds sliced thinly

Instructions

  • Take water in a pot. Sprinkle agar agar powder over the water and mix well. Cook this on low heat till the agar agar melts completely. Now add in sugar and cook till sugar melts.
  • Once sugar is melted, reduce the flame on low. Pour in thick coconut milk and cardamom powder. Mix well and cook on low heat till the mix is heated.
  • Now strain this mix using a sieve in a bowl. Now Pour the strained mixture in the baking tray and allow it to sit for 15 minutes so the pudding sets half way through. Now sprinkle nuts on top of the pudding evenly. Place the pudding in fridge and let it set for 1 hour.
  • Now slice them into pieces. You can serve them immediately or put them in the fridge and serve cold.

For Agar Agar| China grass Strips

Break agar agar into small pieces and add them to a bowl. Add water and let them soak for 10 mins. Now transfer them to a kadai and heat them so they can melt. Heat them on a low heat. This will take a good 10 to 15 mins or so.

Expert Tips

  • Don’t use too much agar agar else the pudding may turn out hard in texture.
  • Once coconut milk is added, cook this in low heat so the coconut milk doesn’t separate. 
  • The same recipe can be made with regular milk instead of coconut milk.
  • If you don’t prefer cardamom, you can use vanilla extract instead.
  • Make sure to strain the pudding mixture for smooth texture. 
  • Agar agar or China grass sets at room temperature. But this pudding taste best when served chilled. So keep in fridge for few hours before serving.
