Ingredients

  • 1 tsp Oil
  • 1 tsp Cumin Seeds
  • 1 Onion sliced thinly
  • 1 Celery sliced thinly
  • 3 cups Spinach I used palak (sliced thinly)
  • 4 Eggs
  • Salt to taste
  • Pepper to taste
  • Water a Splash

Instructions

  • Heat oil in a pan, add in cumin seeds. Saute it for a min.
  • Add in onions, celery and saute for 5 mins or so till it gets lightly golden.
  • Add in spinach and a splash of water. Cook till the spinach is cooked and wilted.
  • Now set the spinach aside and crack open 4 eggs in the side. Scramble it slightly.
  • Now fold the spinach in and add in salt and pepper. Toss once.
  • Serve with  toasted bread or inside some pita pockets..
