Equipment

  • Large Stock pot
  • Slotted Spoon
  • Colander
  • Baking Tray
  • Freezer Bags
  • Chopping Board
  • Knife
  • Peeler

Ingredients

  • 1 kg Carrots
  • 1 kg Beans

Instructions

FOR CARROTS:

  • Take water in a large pot and bring it up to a boil. In another pot take water and ice cubes.
  • Peel Carrot and cut off the ends of it. Chop them into bite size pieces or the size which you want it to be.
  • Now drop the carrot in the water and cook them for 5 mins.
  • Now using a slotted spoon remove them from the water and immediately immerse them in ice cold water.
  • Drain them in a colander till they are completely dry.
  • Transfer them to a baking tray and freeze them for 4-5 hours..
  • Once they are frozen collect them in a freezer bag..Label them and freeze.

FOR BEANS.

  • Cut the top and bottom of the beans and cut them into small pieces or in the size which you prefer.
  • Now drop the beans in the water and cook them for 5 mins.
  • Now using a slotted spoon remove them from the water and immediately immerse them in ice cold water.
  • Drain them in a colander till they are completely dry.
  • Transfer them to a baking tray and freeze them for 4-5 hours..
  • Once they are frozen collect them in a freezer bag..Label them and freeze.

Notes

1.Make sure that you freeze them first in a baking tray or any plate, this will make the carrot freeze individually and they won't clump up in the freezer.
2.Label the bags properly.This will give a clear idea of the time frame when it is frozen.
3.You can cut the vegetables as per your liking.
4.This can be frozen for upto 6 months.
5.Cooking them first and immersing them in ice cold water make the vegetables stay crunchy and helps it to retain its colour.
