Take water in a large pot and bring it up to a boil. In another pot take water and ice cubes.
Peel Carrot and cut off the ends of it. Chop them into bite size pieces or the size which you want it to be.
Now drop the carrot in the water and cook them for 5 mins.
Now using a slotted spoon remove them from the water and immediately immerse them in ice cold water.
Drain them in a colander till they are completely dry.
Transfer them to a baking tray and freeze them for 4-5 hours..
Once they are frozen collect them in a freezer bag..Label them and freeze.
FOR BEANS.
Cut the top and bottom of the beans and cut them into small pieces or in the size which you prefer.
Now drop the beans in the water and cook them for 5 mins.
Now using a slotted spoon remove them from the water and immediately immerse them in ice cold water.
Drain them in a colander till they are completely dry.
Transfer them to a baking tray and freeze them for 4-5 hours..
Once they are frozen collect them in a freezer bag..Label them and freeze.
Notes
1.Make sure that you freeze them first in a baking tray or any plate, this will make the carrot freeze individually and they won't clump up in the freezer.2.Label the bags properly.This will give a clear idea of the time frame when it is frozen.3.You can cut the vegetables as per your liking.4.This can be frozen for upto 6 months.5.Cooking them first and immersing them in ice cold water make the vegetables stay crunchy and helps it to retain its colour.
