Ingredients

  • Hard Boiled Eggs - 4
  • Coconut Oil - 4 tblspn
  • Onions - 1 large finely chopped
  • Curry leaves - 1 spring
  • Salt to taste
  • Ginger Garlic Paste - 1 tblspn
  • Chilli Powder - 1 tsp
  • Pepper Powder - 1 tsp
  • Coriander Powder / Malli Podi -1 tsp
  • Turmeric Powder / Manjal Podi -1 tsp

Instructions

  • Heat oil in a kadai. Add in cooked eggs and sear them on all sides. Remove them to a bowl and slice them in half.
  • Now in the remaining oil, add in onions, curry leaves and saute them till light golden.
  • Add in salt and mix well. Now add in ginger garlic paste and saute for a min.
  • Now add in spice powder and toss well with the oil.
  • Add in seared halved eggs and mix well with the masala.
  • Serve with rice.
  • How to cook hard boiled eggs:
  • Take eggs in a sauce pan and cover with water. Bring it to a boil and cook it for 10 mins on high flame. Switch off the stove and leave it there for 5 mins. Now run the eggs under cold water and peel the skins off.
