Ingredients

  • 3 cups Instant Oats
  • 1 ½ cups Rice Flour
  • 1 cup Curd
  • Water as needed
  • Salt to taste
  • 2 tbsp or use 1 tsp of baking soda Eno Fruit Salt
  • Oil for Frying paniyaram
  • For Seasoning:
  • 1 tbsp Oil
  • 1 tsp Mustard Seeds / Kaduku
  • 1 tsp Cumin Seeds / Jeerakam
  • 1 tsp Urad dal / Ulundu
  • 10 chopped finely Shallots / Sambar Onion
  • 10 chopped finely Curry leaves
  • 2 chopped finely Green Chilli
  • -1 cup grated Carrots
  • 3 tbsp finely chopped Coriander leaves / Cilantro

Instructions

  • Take oats, rice flour, curd and water in a mixing bowl and make a smooth batter.
  • Now make the seasoning by heating oil, and crackling mustard, cumin and urad dal and let it sizzle for a min.
  • Add in onions, curry leaves, green chilli and saute for a min.
  • Add in carrots and coriander leaves and mix well for 30 sec.
  • Now pour this over the oats mixture and mix well.
  • Add in salt and eno salt and mix well till they foam up.
  • Heat paniyaram pan, drizzle oil in it and let it heat up.
  • Pour spoonful of batter in the paniyaram pan and cook till the bottom crisp up.
  • Flip over and cook.
  • Serve with chutney.
