Ingredients

  • Ridge Gourd / Peerkangai - 1 peeled and chopped finely
  • Egg - 4
  • Oil - 1 tblspn
  • Mustard Seeds / Kaduku - 1 tsp
  • Cumin Seeds / Jeerakan - 1 tsp
  • Curry Leaves - 1 sprig
  • Onion - 1 large chopped finely
  • Capsicum / Bell Pepper - ½ cup chopped finely
  • Green Chilli - 1 or 2 chopped finely
  • Ginger Garlic Paste - 1 tsp
  • Chilli Powder - 1 tsp
  • Turmeric Powder - 1 tsp
  • Coriander Powder - 2 tsp
  • Garam Masala Powder - 1 tsp
  • Salt to taste
  • Coriander Leaves a handful finely chopped

Instructions

  • Heat oil in a pan, add in mustard, cumin and curry leaves and let them sizzle.
  • Add in onions, green chillies and saute for a min.
  • Add in ginger garlic paste and mix well.
  • Add in spice powders, salt and mix well.
  • Add in chopped ridge gourd and toss well. Cover and cook for 5 mins or 8 mins till the ridge gourd is done.
  • Now add in eggs and scramble it to your liking.
  • Add in coriander leaves and mix well..
  • Serve.
