Ingredients

  • 2 cups Rava / Sooji
  • 2 cups Plain Yogurt / Curd
  • Water as needed
  • Salt to taste
  • 1 tsp Eno Fruit Salt

For Seasoning:

  • 1 tbsp Oil
  • 10 Whole Cashews as needed
  • 1 tsp Mustard Seeds / Kaduku
  • 1 tsp Urad dal / Ulundu Paruppu
  • 2 Green Chillies chopped
  • 1 sprig Curry leaves
  • 1 tbsp ginger grated

Instructions

  • Take sooji and yogurt in a bowl and mix well. Add salt and mix into a thick batter. Set aside for 15 mins.
  • After 15 mins the batter will be very thick. Now add in water to reach the perfect thick consistency like idli batter.
  • Make seasoning, by heating some oil and crackling in the spices. mix well..Pour it into the batter and mix well.
  • Add Eno salt and mix well. The batter will get foamy and light.
  • Now grease idli plate lightly with oil. If you are using cloth to line idli plates. Wet it completely in water. Spoon batter in and steam cook for 10 mins.
  • Now remove the plates from steamer and invert it on a plate. Carefully remove the cloth.
  • Serve hot with chutney.
