Bring water to a boil. Add spinach and cook them for 2 mins. Drain and squeeze. Chop them and set aside.
In the same water, add noodles and cook for 6 to 7 mins. Drain and set aside in the same bowl. Add sesame oil and toss well.
Now heat oil in a pan, saute veggies light colour first and then dark colour. starting from onions, carrots and then zucchini, peppers and spring onions.
